Surprise Pantry Ingredient :: Canned Chicken
It is the end of the day, and if you are like me, cooking an elaborate dinner is the last thing you want to deal with. Let me introduce you to a new staple to our panty…canned chicken. I had reservations about canned chicken, but adding it with a few other ingredients has allowed me to get dinner to the table in minutes. Below are two quick high-protein recipes that the whole family will enjoy.
High Protein Chicken Tacos
Ingredients:
- 1 can of chicken (drained)
- 1 can of black beans (drained and rinsed)
- 1 can of corn (drained)
- 1 can of Rotel
- 1 packet of taco seasoning
Directions:
- Add chicken, beans, corn, Rotel, and taco seasoning to the skillet.
- Stir until fully incorporated.
- Heat for a few minutes.
Serve as quesadillas on tortillas or as lettuce wraps. Optional toppings are shredded cheese, sour cream, avocado, or your favorite salsa.
High Protein Buffalo Chicken
Ingredients:
- 1 can of chicken (drained)
- 1 cup of plain Greek yogurt
- 1 ½ tsp ranch seasoning
- 1/3 cup of your favorite buffalo sauce (to desired taste)
- 1/8 cup sharp cheddar cheese
Directions:
- Mix chicken, yogurt, ranch, and buffalo sauce in a small microwave-safe bowl.
- Add cheese to the top. Heat in the microwave for a few minutes.
Serve on tortillas or as a dip with celery, cucumbers, carrot sticks, and bell peppers.
