Easy Egg Roll in a Bowl Recipe
There are just some evenings when I am tired of cooking. Of course, there are times when I enjoy preparing a meal for my family, but if I were honest, I would rather be doing something else, like watching a movie or playing a board game as a family. On those nights, I need a quick dinner.
My go-to meal is a family favorite: deconstructed egg roll in a bowl.
Ingredients:
- 2-Tablespoons sesame oil
- Four green onions (sliced, white and green parts separated)
- ½ cup diced red onions
- Five cloves of garlic
- 1-pound breakfast sausage (or ground meat)
- 1-Tablespoon Sriracha
- One bag of coleslaw mix
- 3-Tablespoons soy sauce (or coconut aminos)
- 1-Tablespoon rice wine vinegar
- Salt and Pepper to taste
Optional Creamy Chili Sauce:
- ¼-cup mayonnaise
- 1-Tablespoon Sriracha
Instructions:
- Heat a large skillet over medium heat. Add sesame oil, whites of green onions, red onions, and garlic. Sautee until softened.
- Add breakfast sausage (or ground meat) and Sriracha to the skillet. Cook until the sausage is browned, approximately 8 minutes.
- Add coleslaw, soy sauce (or coconut aminos), and rice wine vinegar. Stir until well incorporated. Add salt and pepper to taste.
- Continue cooking until coleslaw is tender, approximately 5 minutes.
- Top with optional creamy chili sauce. Serve and enjoy.
