Move over pumpkin spice lattes and apple crisp macchiatos, Louisiana collides with fall with my favorite bread pudding recipes that the whole family will love!
Pumpkin Bread Pudding
Ingredients
- 1 16 oz loaf French bread
- 1/2 cup milk
- 1 1/2 cup heavy cream
- 1 15 oz can pumpkin
- 1/2 cup sugar
- 1/2 cup brown sugar
- 5 eggs
- 2 tsp vanilla
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Instructions
- Preheat oven to 350.
- Spray a 9″x13″ baking dish with non-stick cooking spray.
- Cut bread into 1″-2″ squares and add to large bowl.
- In another bowl whisk together your milk, cream, pumpkin, eggs, sugar, brown sugar vanilla, pumpkin pie spice, cinnamon and nutmeg until combined.
- Pour over bread and stir gently to coat, let soak for about 20 minutes.
- Spread into baking dish and bake in oven for about 50-60 minutes until center is set.
- Cut into pieces and serve with ice cream and caramel sauce if desired.
Apple Bread Pudding
Ingredients
Pudding:
- 1 16 oz loaf French bread
- 2 cups peeled and sliced apples
- 1 ¾ cups milk
- 1 cup brown sugar
- ¼ cup margarine
- 2 large eggs, beaten
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ½ teaspoon nutmeg
Vanilla Sauce:
- ½ cup milk
- ½ cup margarine
- ¼ cup white sugar
- ¼ cup brown sugar
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350. Spray a 9″x13″ baking dish with non-stick cooking spray.
- Cut bread into 1″-2″ squares and add to large bowl.
- Make pudding: Combine bread, apples in in a large bowl. Combine milk, brown sugar, and margarine in a small saucepan over medium heat. Cook and stir until margarine is melted. Pour over bread mixture in the bowl; mix until evenly coated. Pour bread mixture into the prepared baking dish.
- Whisk together eggs, cinnamon, nutmeg and vanilla in a small bowl. Pour egg mixture over bread mixture in the baking dish.
- Bake in the preheated oven until the center is set and apples are tender, 40 to 50 minutes.
- Meanwhile, make vanilla sauce: Mix together milk, margarine, white sugar, and brown sugar in a saucepan. Bring to a boil, remove from heat, and stir in vanilla. Serve over pudding.
