Family-pleasing Fall Bread Puddings: Apple and Pumpkin

Move over pumpkin spice lattes and apple crisp macchiatos, Louisiana collides with fall with my favorite bread pudding recipes that the whole family will love!

Pumpkin Bread Pudding

Ingredients

  • 1 16 oz loaf French bread
  • 1/2 cup milk
  • 1 1/2 cup heavy cream
  • 1 15 oz can pumpkin
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 5 eggs
  • 2 tsp vanilla
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat oven to 350.
  2. Spray a 9″x13″ baking dish with non-stick cooking spray.
  3. Cut bread into 1″-2″ squares and add to large bowl.
  4. In another bowl whisk together your milk, cream, pumpkin, eggs, sugar, brown sugar vanilla, pumpkin pie spice, cinnamon and nutmeg until combined.
  5. Pour over bread and stir gently to coat, let soak for about 20 minutes.
  6. Spread into baking dish and bake in oven for about 50-60 minutes until center is set.
  7. Cut into pieces and serve with ice cream and caramel sauce if desired.
Sweet Homemade Bread Pudding Dessert with Brandy Sauce

Apple Bread Pudding

Ingredients

Pudding:

  • 1 16 oz loaf French bread
  • 2 cups peeled and sliced apples
  • 1 ¾ cups milk
  • 1 cup brown sugar
  • ¼ cup margarine
  • 2 large eggs, beaten
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ½ teaspoon nutmeg

Vanilla Sauce:

  • ½ cup milk
  • ½ cup margarine
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350. Spray a 9″x13″ baking dish with non-stick cooking spray.
  2. Cut bread into 1″-2″ squares and add to large bowl.
  3. Make pudding: Combine bread, apples in in a large bowl. Combine milk, brown sugar, and margarine in a small saucepan over medium heat. Cook and stir until margarine is melted. Pour over bread mixture in the bowl; mix until evenly coated. Pour bread mixture into the prepared baking dish.
  4. Whisk together eggs, cinnamon, nutmeg and vanilla in a small bowl. Pour egg mixture over bread mixture in the baking dish.
  5. Bake in the preheated oven until the center is set and apples are tender, 40 to 50 minutes.
  6. Meanwhile, make vanilla sauce: Mix together milk, margarine, white sugar, and brown sugar in a saucepan. Bring to a boil, remove from heat, and stir in vanilla. Serve over pudding.
