We’ve become one of those families. You know the ones who now don’t eat meat or dairy. And it’s not because of the “What The Health” documentary (though it is an incredibly eye opening documentary). This all started because my husband has what the doctors categorized as Psoriatic Arthritis, and apparently a diet change can help the pain. So here we are. Of course we aren’t perfect, and this is all a learning process of finding new recipes that are filling and delicious. But I’ve finally found the perfect breakfast meal that has greens in it! I mean it’s so good even our toddler eats a bowl or 2 sippy cups full. This is my tried and true smoothie bowl recipe. It’s so tasty that you’ll love it, even if you aren’t plant-based!!
Green Smoothie Bowl
3.5 c. Fresh Spinach
2.5 Frozen Bananas
1/3 c. Frozen Strawberries
1/3 c. Frozen Mango
1/3 c. Water
1 tbsp. Chia Seeds
1 tsp. Hemp Seeds
1/3 c. Water (I usually eyeball this though)
Put all the ingredients in a blender and blend until smooth. I usually add a little bit of water at a time until I reach the desired thickness!
I usually top Michael and I’s with coconut flakes, chia seeds, and hemp seeds but really you can put anything on the top, or eat it as is! Not only is this breakfast amazing because of the sheer deliciousness but also because it’s super easy, and versatile; it can be a grab and go smoothie if you just add more water! Even though we’re still getting the hang of being plant-based, I think it’s safe to say I’ve nailed this smoothie bowl and it’s now a staple in our home!
