Sneaking Those Veggies With Spinach Banana Muffins

Have you ever gone to the grocery store and bought all of the healthy food with every plan to eat healthy, and then you get sick and it all just sits in your fridge till you can stomach something again?

Well, welcome to our household the past 2 weeks. I bought the biggest container of spinach at Costco with all the intent to make smoothies, salads and just all of the delicious food I found on Pinterest. But that all came to a screeching halt when I came down with the worst possible case of Pharyngitis and my son Maverick had a viral infection. Our days went from fun and laughter to some serious snuggles and constant holding (shout out to Sakura Bloom for saving my arms from being permanently numb). So needless to say, cooking was the last thing on my mind, my poor husband lived off of leftovers and cereal. Mav finally ate a bite of avo-ga-do (avocado) toast, and I was able to eat yogurt. Having our serving of veggies was nonexistent. 

Now that I’m feeling semi-human again, I decided to try and cook majority of the spinach that’s in our fridge the easiest way possible. I came across a recipe for Spinach and Banana muffins on Pinterest and I’ve decided to give it a try and add in a few extra things like chia, hemp, and flax seeds to try and up the nutrition. 

Y’ALL. These muffins are incredible! They honestly taste just like banana muffins; they may be a staple in our home from now on especially since you don’t even taste the spinach. I’ll be as sneaky as needed when it comes to Mav eating all of his veggies. Plus it’s always fun eating colorful foods, and these are just so green! The poor kid would only eat one piece of avocado toast but he ate this muffin so fast I thought he threw some of it on the floor – thankfully he didn’t! We’ve been eating them every day since and he keeps asking for the “green muffins.” 

I really hope your kids love them as much as Mav does!!
