Taco Rice Bowl :: Build Your Own Quick Dinner Ideas

Our family is full of varying pallets when it comes to food. It can make dinner prep…difficult. Build Your Own anything-type bowls have quickly become fan favorites around here! This is one of our favorites! Most, if not all ingredients can be altered depending on your family’s likes or dislikes.

The gist is you pile rice, seasoned meat, cheese, taco seasoning, veggies, and chips–Dorito’s to make it super kid friendly!

In our house we cook basmati rice in bulk (because its the best) as we eat a lot of Asian inspired dishes. While this meal isn’t Asian, it does help speed up dinner. We often use a rotisserie chicken, broken down and simmered in taco seasoning, but if your crew prefers ground beef or pork, use whatever makes your life easier! We have bowls of each ingredient on the island and the kids add what they want, then we head to the table for dinner!

Here’s what we usually have for our family of five ::

Build Your Own Taco Rice Bowls
– Basmati rice (we usually cook 3c worth at a time)
– Meat seasoned with taco seasoning (chicken, ground meat, pork, beef, or go without for veg)
– Cheese (shredded or liquid)
– Sprinkle of Taco Seasoning to taste
– Corn
– Salsa
– lettuce
– Avocado diced
– Beans (refried or black)
– Diced onion
– Jalapeño Diced
– Tomato Diced
– Mushrooms (if I’m feeling fancy)
– Sour Cream
– Hot Sauce
– Tajin
– Crumbled Dorito or Tortilla chips (my kids FAR prefer the Dorito’s)

Pile your bowl with the foods you love! My general rule is at lease one protein and one veg for the kids. I try really hard to make sure each meal has at least one thing they eat willingly. The chips add a nice crunch for texture. My kids come back for thirds and fourths often! Make it as easy as possible! If you’re using canned corn or beans, strain it and serve straight from the can–save yourself the dishes! This is a great family meal or even if you’re hosting a crowd. People get what they want, leave what they don’t want; and everyone is happy!
