Easy Egg Roll in a Bowl Recipe
There are just some evenings when I am tired of cooking. Of course, there are times when I enjoy preparing a meal for my family, but if I were honest, I would rather be doing something else, like watching a movie or playing a board game as a family. On those nights, I need a quick dinner.
My go-to meal is a family favorite: deconstructed egg roll in a bowl.
Ingredients:
2-Tablespoons sesame oil
Four green onions (sliced, white and green parts separated)
½ cup diced red onions
Five cloves of garlic
1-pound breakfast sausage (or ground meat)
1-Tablespoon Sriracha
One bag of coleslaw mix
3-Tablespoons soy sauce (or coconut aminos)

Facing Childhood Fears
The whimsical worries of childhood! My two tiny tornados, Jack and Jacob, are navigating the wild world of kid fears. Jack, my 8-year-old mini-me, is convinced that his basketball skills will fail him (and so will his friends). Meanwhile, Jacob, my fearless kindergarten explorer, is certain that mischievous monsters are hiding in every crayon box.

As we hit the road, we play our favorite game, "Guess the Song." Jack, my third-grade math whiz, sings along to Taylor Swift at the top of his lungs, while Jacob, my kindergarten artist, giggles uncontrollably to "The Wheels on the Bus." I love watching them let loose and have fun.
